性质描述: 该品为赤褐色透明的鳞片状或粒状结晶。能溶于水，不溶于乙醇和醚。无臭，具有咸味和弱铁锈味。在湿空气中可潮解，水溶液呈弱碱性的反应。柠檬酸铁铵是柠檬酸铁FeC6H5O7的柠檬酸铵（NH4）3C6H5O7的复盐，其组成因合成条件不同而异没有确切的化学式。棕色鳞片状的晶体含铁量较高，达18.5%.绿色鳞片状的合铁量较低。
生产方法: 把氢氧化铁溶解于柠檬酸中，用氨水和，再经干燥而得。（1）氢氧化铁的制备 将硫酸亚铁加入水中，在搅拌下徐徐加入硫酸，再加入氯酸钠水溶液。然后剧烈搅拌，温度上升至80℃以上，再加入氯酸钠。搅拌直至反应终止（用铁氰化钾检查不呈亚铁反应），得硫酸铁溶液。将此溶液加入反应罐内，加氢氧化钠溶液，剧烈搅拌，反应温度为80-90℃，反应液由粘稠变稀薄时，加水洗涤至硫酸根和氯根符合要求止。沥干得氢氧化铁。（2）柠檬酸铁铵制备 将柠檬酸、氢氧化铁和水加入反应罐内，搅拌，温度控制在95℃以上，保温1h。然后冷至50℃，搅拌下通氨。静置48h以上。取上清液过滤，滤液浓缩成膏状，于80℃干燥得柠檬酸铁铵。对硫酸亚铁的总收率为73-75%。
用途: 棕色品用作补血药，以治疗缺铁性贫血；可作为食品添加剂，按日本《食品添加物公定书》规定，含铁量为16.5%-21.2%。棕色品和绿色品都是化学敏感物质，绿色品较棕色品更易感光。涂有绿色柠檬酸铁铵和赤血盐（铁氰化钾）的纸称为蓝色晒图纸。在曝光时，柠檬酸盐内的三价铁原为二价，遇水即产生腾氏蓝，故受光部分变为蓝，不受光部分仍为白色，可得蓝底白线图样。

The ammonium iron (III) citrate promotes the growth of the Listeria spp., and together with esculin (a component of the FRASER broth base), permits the β-D-glucosidase detection in Listeria spp.
